Zesty Meatloaf October 8, 2010 Recipe: Zesty Meatloaf Summary: No one likes to admit they like meatloaf. Maybe, it's the name. Someone should come up with a better one. I think it was my son, Ben, that came up with "Meat Salad Pie Cake". So, here it is folks... a pretty stinkin' good Meat Salad Pie Cake recipe. You'll love it with garlic mashed potatoes. It's a Marilyn Harris recipe. Ingredients 3 tablespoons olive oil 1 cup chopped onion 2 large garlic cloves 2 pounds ground sirloin 2 eggs 2 tablespoons milk 1 cup bread crumbs ¼ cup parsley 2 tablespoons basil 1½ teaspoon salt ¼ teaspoon cayenne pepper 1 cup ketchup 2 tablespoons liquid from canned jalapeños 2 tablespoons Dijon mustard ¼ teaspoon hot pepper sauce Instructions Heat oil in skillet and sauté onion and garlic. Mix with ground beef. Beat eggs and milk, pour over bread crumbs. Add bread crumb mixture, parsley, basil, salt and pepper to the beef. Press into loaf pan. Use a knife to loosen the beef from the side of the pan and turn beef into a 9 x 13 pan. Bake 75 minutes at 350° or until internal temperature is 160°.
