Barbecued Beef Brisket

Recipe: Barbecued Beef Brisket

Summary: My boys love beef. Pretty much any cut, any cooking method, any seasonings. This brisket will turn out delicious either baked or grilled over indirect heat.

Ingredients

  • 5 – 6 pounds brisket, trim fat
  • 2 onions, sliced thinly
  • 1 head garlic, minced
  • 2 jalapeno peppers, chopped
  • ½ cup brown sugar
  • ½ cup Worcestershire sauce
  • 2 cup barbeque sauce
  • 1 cup water
  • ½ cup ketchup

Instructions

  1. In roasting pan, spread garlic, onions, jalapenos. Place brisket on top.
  2. Mix all other ingredients in bowl. Pour over brisket. Its most tender if it cooks in the gravy.
  3. Cover tightly with foil. Grill or Bake at 350° - for the following times: 1½ hours – 1-2 pounds 2½ hours – 3-4 pounds 3½ hours – 5-6 pounds 4½ hours – 8-9 pounds
  4. Remove meat from pan and allow to rest 10 minutes before slicing. Skim fat off pan drippings and serve with brisket. Refrigerate left overs in separate container from gravy.

Zesty Meatloaf

Recipe: Zesty Meatloaf

Summary: No one likes to admit they like meatloaf. Maybe, it's the name. Someone should come up with a better one. I think it was my son, Ben, that came up with "Meat Salad Pie Cake". So, here it is folks... a pretty stinkin' good Meat Salad Pie Cake recipe. You'll love it with garlic mashed potatoes. It's a Marilyn Harris recipe.

Ingredients

  • 3 tablespoons olive oil
  • 1 cup chopped onion
  • 2 large garlic cloves
  • 2 pounds ground sirloin
  • 2 eggs
  • 2 tablespoons milk
  • 1 cup bread crumbs
  • ¼ cup parsley
  • 2 tablespoons basil
  • 1½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 cup ketchup
  • 2 tablespoons liquid from canned jalapeños
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon hot pepper sauce

Instructions

  1. Heat oil in skillet and sauté onion and garlic. Mix with ground beef.
  2. Beat eggs and milk, pour over bread crumbs. Add bread crumb mixture, parsley, basil, salt and pepper to the beef.
  3. Press into loaf pan. Use a knife to loosen the beef from the side of the pan and turn beef into a 9 x 13 pan.
  4. Bake 75 minutes at 350° or until internal temperature is 160°.
  5. Mix together ketchup, jalapeño juice, mustard and hot pepper sauce. Spread sauce over baked meatloaf.

Hamburger Casserole

Recipe: Hamburger Casserole

Summary: Okay, don’t turn your nose up. I grew up on this odd combo of ingredients and I LOVED IT! At least one of my kids begs his wife to cook it for him, and she reluctantly complies. You’re a good wife, Corey.

Ingredients

  • 1 ½ pounds ground beef
  • 1 cup chopped onion
  • 1 ½ cups frozen corn
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 3 – 4 cups cooked egg noodles
  • 8 ounces sour cream
  • 1 cup bread crumbs
  • 1 small can of green chilies
  • ¾ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Brown ground beef and onion. Drain fat.
  2. Combine ground beef, corn, soups, sour cream, chilies, spices and noodles.
  3. Pour mixture into baking dish and cover with bread crumbs.
  4. Bake at 350° for 45-60 minutes.
