Recipe: Mexican Wedding Cakes

Summary: December 7 - A Cookie A Day Until Christmas!  I’m not sure how these cookies got their name, but it’s a little condescending to all the wedding planners south of the border. As if they can't make a legitimate wedding cake.... I think they’re also called Russian Tea Cakes, which makes more sense. Whatever, I love them! They’re beautiful, little bundles of buttery, nutty LOVE and no Christmas Cookie plate would be complete without them.

Ingredients

  • 2 cups butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 4½ cups flour
  • 1½ cups pecans, chopped
  • ½ teaspoon salt
  • Powdered sugar

Instructions

  1. Cream butter and powdered sugar. Add vanilla, dry ingredients and pecans.
  2. Roll in small balls, 1½ - 2". Bake at 350° for 10 minutes, until just lightly brown.
  3. While warm, roll cookies in powdered sugar.
  4. When cookies are completely cool, roll in powdered sugar again.
  5. Mmmmm, lovely.
