Recipe: Mexican Wedding Cakes
Summary: December 7 - A Cookie A Day Until Christmas! I’m not sure how these cookies got their name, but it’s a little condescending to all the wedding planners south of the border. As if they can't make a legitimate wedding cake.... I think they’re also called Russian Tea Cakes, which makes more sense. Whatever, I love them! They’re beautiful, little bundles of buttery, nutty LOVE and no Christmas Cookie plate would be complete without them.
- 2 cups butter
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 4½ cups flour
- 1½ cups pecans, chopped
- ½ teaspoon salt
- Powdered sugar
- Cream butter and powdered sugar. Add vanilla, dry ingredients and pecans.
- Roll in small balls, 1½ - 2". Bake at 350° for 10 minutes, until just lightly brown.
- While warm, roll cookies in powdered sugar.
- When cookies are completely cool, roll in powdered sugar again.
- Mmmmm, lovely.
