Recipe: Gingerbread Cookies

Summary: December 16 - A Cookie A Day Until Christmas!  Another June Morris recipe!  AND we couldn't really talk about Christmas cookies without gingerbread.  I don’t really love my gingerbread cookies to “bite”. Don’t tell mom, but I usually cut down on the cloves..Roll them a little thick, ½” or so, and you’ll have a nice, soft cookie. If you want crispy, hard cookies, save yourself the effort and visit Kroger.

Ingredients

  • 2¾ cup flour, less 1 tablespoon
  • 3 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cloves
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • 1 egg
  • 1 cup brown sugar
  • ⅔ cup molasses
  • ½ cup butter

Instructions

  1. Mix together dry ingredients.
  2. Cream egg, sugar, molasses and butter.
  3. Stir in dry ingredients.
  4. Chill overnight. Roll out on floured surface.
  5. Cut and bake 10 min at 350°.

Variations

Roll into balls, roll in sugar and bake. Way easier, not as festive, however.
