Oatmeal Cake Recipe: Oatmeal Cake Summary: My daughter-in-law, Kendra, made this cake this morning. According to her mom, Jennifer, it's better when it's cooled completely. It smelled good enough to eat right out of the oven, but we waited. Totally worth the wait. Ingredients 1½ cups boiling water 1 cup quick cooking oats 1 cup shortening 2 eggs, beaten 1 cup brown sugar 1 cup sugar 1½ cups flour 1 teaspoon nutmeg 1 teaspoon soda 1 teaspoon cinnamon 1 teaspoon vanilla ½ teaspoon salt Topping: 1 stick butter, melted ½ cup sugar ¼ cup evaporated milk 1 teaspoon vanilla 1 cup coconut 1 cup chopped nuts Instructions Pour boiling water over oats and shortening. Add the eggs and sugars to the oat mixture. Add the dry ingredients and mix well. Pour into ungreased 9x13 cake pan. Bake at 350° for 30 minutes. Combine ingredients for topping and pour over hot cake. Place under broiler for 1 – 2 minutes, or until coconut is toasted light brown. Microformatting by hRecipe.
